30 minute or Less Salmon and Asparagus Dinner

Are you looking for a quick but healthy oven meal that you can cook in 30 minutes or less? This salmon and asparagus meal is so easy and requires very little prep.


It's so simple and almost impossible to mess up!


There are days when I would come home from work and have so much I needed to do around the house before dinner. Hubby would be still at work about to clock out and I would be juggling dinner, household tasks, kids, dogs, and then my needs as well!


We would be eating at 7:00 and 8:00 if I chose to wait and attend to everything else before starting dinner, which led me to creating this dinner idea. I am always looking to sneak in some healthy meals so over time it will grow on us. I also don't like to spend a lot of time cooking in the kitchen during the week because life is so busy and crazy. I'm tired at times when I get home from work and then I have to manage the chaos.


Normally, I'm interrupted by the baby needing a bottle or toddler needing assistance in the bathroom. How am I supposed to pay attention to a hot stove and juggle all of those things at once? Some days it feels impossible. I knew that if I was going to be able to manage the chaos, I needed an oven dinner that took 30 minutes or less. I came up with this oven dinner that required few grocery items and took about 5 minutes to prep. Here is what you'll need:

  • Salmon

  • Asparagus

  • 2 tablespoons of olive oil

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon of onion powder

  • 1/2 teaspoon of Italian seasoning (Note: This recipe amount is for 2 servings).



Step 1: Preheat Oven & Start Prepping

First, preheat your oven to 425 degrees. While your oven is preheating, rinse off and clean your asparagus. Chop the ends of your asparagus off and place on a baking sheet (use parchment paper for easy clean up). Then take your salmon and cut up how many servings you would like. After, place on baking sheet next to asparagus.


Step 2: Add Olive Oil & Seasoning

Drizzle 1 tablespoon of olive oil on your salmon and 1 tablespoon of olive oil on your asparagus and spread evenly. Then, sprinkle 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/2 teaspoon of Italian seasoning on your salmon and spread evenly. Then, sprinkle 1/2 teaspoon of Italian seasoning on your asparagus and spread evenly.

Step 3: Place in Oven

Set timer for 15 minutes and place baking sheet in oven. Then, check back in 15 minutes to see if salmon is cooked how, you like it. Leave in 5 more minutes if you would like salmon cooked a little more. Remove asparagus from oven if you cook salmon more than 15 minutes.


Tip: If your salmon is previously frozen, you may want to cook salmon for 20 minutes instead of 15 minutes. This meal makes evenings less stressful and overwhelming. I'm able to get more accomplished when I get home AND get dinner on the table at a reasonable time. It's a mom win!
